It? wise to use sage! In medicinal lore, Sage has one of the longest histories of use of any medicinal herb and is particularly associated with brain health. It is small herb with soft, silvery, grey-green leaves. The leaves have a fresh, balsamic aroma and an herbaceous, savoury, astringent and slightly peppery flavour. The flavour remains the same when dried, and the leaves remain surprisingly soft compared to most dried herbs.

HOW TO USE
Sage goes beautifully in dishes with fatty meats and ingredients as it helps to balance their intensity. Often used in stuffing, it is best used in moderation so as not to be overpowering.
