The fruits, also known as pods, come in a variety of colours, shapes and sizes with pale yellow or white disc-shaped seeds that contain the majority of the heat in a chilli. Chilli can turn a dull dish into something extraordinary. Once dried, chillies are usually red and impart a full-bodied fruity, smoky flavour.

These can be added while cooking to develop a strong but not overly hot flavour, then removed before serving if desired.
