Mint has a characteristic flavour and aroma that is refreshing and cooling. When these leaves are dried they form tiny, dark green, crisp, crumbled leaves that almost resemble a coarse powder. The dried leaves are less intense than the fresh leaves and so can be used generously.

Use to make mint sauce or jelly for your next roast lamb, or mix through a warm couscous salad. Particularly nice with peas!
