Celery Seeds are from a plant similar to the more common variety of celery eaten as a vegetable. Also known as ?mallage? the seeds may be smal lbut they have a strong flavour and pungent grassy aroma that needs to be used sparingly so as not to overpower a dish. It has a warm, celery-like flavour with a hint of bitterness. The khaki-coloured seeds are usually used whole, but can also be ground into spice blends or mixed with salt to form celery salt, an essential ingredient in a Bloody Mary.
HOW TO USE
Like the fresh vegetable, Celery Seeds go well with most soups and stews and is particularly nice with tomatoes. Also used to add some pizazz to dressings, pickles, and on fish and eggs, it is very versatile and will add a little extra something to your next potato salad or sandwich spread!
